Sweet & Savory Pumpkin Dishes

This is the perfect time of year to cook up and enjoy a delicious pumpkin dish… or two! Pumpkins are so versatile, you can dress them up as dessert or serve them as the main dish. I had guests for dinner last night and did both! And just to make sure my Certain Little Someone wasn’t kept out of the loop, I made both the main dish and the dessert safe for him. Here are both recipes for you to enjoy as well:

Savory Pumpkin Pasta

1/2 lb rice noodles, cooked according to package directions

1/2 cup pureed or canned pumpkin

3/4 cup rice milk

1/2 tsp garlic salt

1/2 tsp freshly ground black pepper

1/2 tsp cumin

1/4 tsp paprika

1/2 cup cooked cubed chicken

1 tsp corn starch mixed with 1 tsp water

Heat the pumpkin, rice milk and spices/seasonings in a saucepot, stirring frequently to prevent burning. Bring just to a boil, and add corn starch mixture. Reduce heat to low and continue stirring and simmering until slightly thickened. Remove from heat and add chicken. Pour mixture over noodles, and serve hot.

And for dessert…

Pumpkin Pudding

1 cup pumpkin or sweet winter squash puree

1/2 cup coconut milk

1/2 cup raw sugar

1/4 cup honey

2 tsp cinnamon

1 tsp powdered ginger

1/2 tsp freshly ground nutmeg

1/4 tsp salt

1 tsp corn starch mixed with 1 tsp water

Heat all ingredients except for corn starch and water in sauce pot over high heat, stirring constantly until sugar is melted. Bring to a boil, while still stirring, then add corn starch mixture. Reduce heat to low, and continue stirring until thickened. Remove from heat and pour through a fine mesh strainer into a bowl. Chill and serve cold.

I sprinkled his with crumbled safe granola. You could also serve it parfait style with any safe crumbled cookie, cake or cracker. Other options include safe marshmallows or chocolate chips. Top it all off with a drizzle of safe chocolate syrup or melted chocolate.
